Rocket DRy Rubs are a potent blend of spices, herbs, and sugars that masterfully enhances the flavor of meats. By mixing dry and spice ingredients together, a dry rub becomes an ideal coating for imbuing meats with rich, complex flavors.
Creating a homemade dry rub involves balancing the essential taste profiles: sweet, savory, and spicy. The combination of these elements results in a burst of flavors that delight the palate.
For the sweet component, brown sugar serves as the perfect foundation. I often opt for dark brown sugar to introduce a hint of molasses, which enhances the flavor profile, especially as the sugar caramelizes under heat.
To introduce heat, cayenne pepper is my go-to spice due to its ability to add a significant kick without overshadowing the other flavors. In cases where cayenne isn’t available, chili powder makes a suitable substitute, although it tends to dominate the flavor spectrum more assertively.
The savory aspect of the rub is built on essential ingredients like salt, black pepper, onion powder, and garlic powder. To these, I add layers of aromatic depth with spices such as cumin and coriander.
Paprika plays a crucial role in any dry rub. For oven-cooked meats, I prefer smoked paprika for its depth of flavor. However, when grilling or smoking meats, regular sweet paprika suffices, as the natural smokiness of the grill imparts ample flavor.
